Director of Operations
Mark is a passionate food and beverage professional with over 15 years in the service industry, whose career began when he received his culinary degree from Baltimore International College and pursuing his butcher apprenticeship in Idaho.
Having spent the last 10 years in Las Vegas in the management field, Mark was formally the district manager for a local gaming company, overseeing a territory with over 12 venues where he sought out vendors and made relationships with key industry professionals.
Prior to working as a district manager Mark was the general manager for 4 years for Block 16 Hospitality Group, one of the largest independent restaurant groups in Las Vegas. In addition to managing a team of key talents from some of the most prestigious venues in the world such as Nobu and Wolfgang Puck, Mark was responsible for all aspects of the outlets for new Las Vegas Strip Venues improvements and successes. While simultaneously continuing his education in the food & beverage industry by completing his first level Cicerone Certification.
Prior to working with Block 16 Hospitality, Mark was general manager at Wynn Las Vegas. Mark first managed Zoozacrackers Deli, following up with becoming the manager for Wynn’s fine dining venue, Lakeside, for a total of 5 years.
Prior to moving to Las Vegas Mark was a managing partner at Vinea, a restaurant in his hometown of Cleveland for 3 years. Vinea was a small wine/gastropub in playhouse square that was open for 3 meal periods and served everything from French Toast with warm Vanilla Bourbon Syrup to Bouchot Mussels in a wit beer cream sauce.
Mark currently resides in Las Vegas and is the Director of Operations for Enclave located 1 mile from McCarran airport and 4 miles from the Las Vegas strip. Enclave is a 75,000 square foot meetings and events center.
